A velvet, generous and long-lasting, naturally sweet wine from noble rot grapes from Fokiano variety (100%) P.G.I. IKARIA.

Bright orange with amber highlights. Limpid and full bodied with long lasting legs.

Vibrant and rich in the nose, with prevailing scents of honey and dried fruit.

Rich and warm in the mouth with a hint of honeycomb, dried fruits (bergamot) and herbs. Its high crispness and high alcohol are perfectly balanced. Rich and long-lasting fruit punch with notes of dried mountain herbs offer a very long aftertaste.

Food and wine pairing: Tama can be paired harmonically with candied fruits, fruit with honey, fruit salads, chocolate, dry fruit and fat cheeses with honey. It is served at 10°C.

Vineyards: Ikaria, Raches, Vrachades 0.3ha, plant age 60 years, yield 22 hl / ha, organic cultivation, altitude 750 m. Granite soil with low pH and high concentration in metals and trace elements.

Protected Geographical Indication (PGI) IKARIA

Vinification: Dehydration on plants and frames; “Cold soaking” pre-fermentation before sediment is removed. Wild indigenous yeast fermentation in stainless steel tanks (lower than 10° C/80 days). Wine stored in oak barrels for 2 years, where aeration, stirring, & decanting is repeated 4 times, before it is siphoned off in stainless steel tanks for another 2 years. Bottled unfiltered & unfined; only a minimal addition of sulfites upon bottling.

Aging: Susceptible to very long aging.
