Natural dry red wine with the traditional Ikarian proccess then followed by french oak barrel aging, from Fokiano 100%.

Deep bohemian garnet hued ruby colour. Thick body with long lasting legs.

An aroma combination of red and black fruit with a main focus on vanilla, traces of dried nuts and cocoa.

Multi-layered taste intersection between forest fruit and carob, intense minerality, soft tannins and long lasting aftertaste.

Food Pairing: Combined with matured goat cheese and matured cold cuts, and also with roasted red meat. Consumed in room temperature; served directly from the bottle.

TECHNICAL CHARACTERISTICS - VINIFICATION - AGING

Wine: Natural Red dry.

Varietal composition: Fokiano 100%

Vineyard: Ikaria , Raches , Profitis Ilias 1,5ha, age of grapevines 50 and 10 years old, yield 25 hl/ha, organic cultivation, altitude 600 m. Sandy clay soil from decomposed granite rock with low pH and high concentration in minerals and micronutrients.

Vinification: Pressed in the stone press, fermented with skin maceration for 40 days, then matured in French oak barrels for twelve months. Wild indigenous yeast fermentation; no mechanical intervention and filtering; bottled unfiltered & unfined; zero addition of sulfites.

Aging: Best consumed now.

Production: 600 bottles, 28 left.
