Vineyards: Ikaria, Litani (400m. alt.) certified biological cultivation, and biodynamic cultiavtion, on young plants and adult from 1-40 years old.
Winemaking: Monovarietal natural sparkling dry white wine, produced from the local Begleri P.G.I Ikaria grape variety. Secondary fermentation in bottle in the cellar for 9 months. Limited production; wild indigenous yeast fermentation; undisgorged, no added sulphites, unfiltered & unfined.
Pressure: 4 Bar.
Topping liquer : Zero dosage
Aging: Susceptible to long aging, up to 30 years.
Production: 400 bottles.
