Winemaking: Monovarietal natural sparkling dry white wine, produced from the local Begleri P.G.I Ikaria grape variety. Underwater secondary fermentation
process for at least 12 months in the Ikarian Sea. Limited production; wild indigenous yeast fermentation; bottled unfiltered & unfined.
Pressure: 4 Bar.
Topping liquer : Zero dosage
Aging: Susceptible to long aging, up to 30 years.
Production: 80 bottles.
