Vineyards: Ikaria, Profitis Ilias (600m. alt.) certified biological cultivation, and biodynamic cultiavtion, on adult plants from 15-60 years old.
Winemaking: Monovarietal natural sparkling dry red wine from Pithari collection, produced from the local Fokiano P.G.I Ikaria grape variety. Secondary fermentation in bottle in the cellar for 9 months. Limited production; wild indigenous yeast fermentation; undisgorged, no added sulphites, unfiltered & unfined.
