Natural dry white wine from Begleri varietal with P.G.I IKARIA.

Antique gold color with bright gold highlights.

Natural oxidation emerging on the nose with intense gunpowder and rainy forest aromas. The pine, mushrooms and dried apricots reach the nose in a ever developing aroma for hours after opening the bottle.

Mouthful of ripe stone & tropical fruits with long aftertaste. Herbal hinges and flowery taste. Multiple layers are unravelled from the opening of the bottle that carry the drinker to a wonrdeful experience.

Pairing combinations: Matured excuisite fine cheeses with strong character, grilled fishes with herbs, grilled mushrooms or simply by the glass reading a book.

Best served at 14°c-18°c.

TECHNICAL CHARACTERISTICS - VINIFICATION - AGING

Wine: Natural dry white.

Varietal composition: Begleri variety 100%.

Protected Geographical Indication (PGI): Ikaria

Region/Vine domain: Ikaria/ Pattisa (800 m. alt.) & Pr. Ilias(600 m. alt.)

Vinification: Manual harvest and destemming in the traditional stone press. Maceration for 2 two days and then wild yeast fermentation in stainless steel tank for two months. Then bottled unfiltred, unfined without addition of sulphites.

Aging: Best consumed now, it is at it`s peak.

Production: 1300 bottles, 30 left.
