Varietal composition: Begleri variety 100%.
Region/Vine domain: Ikaria/ Litani(400m. alt.) & Pr. Ilias(600 m. alt.)
Vinification: Grape-stomping in the traditional stone press. Grape pomace immersed in must for 5 days. Removal of pomace followed by
fermentation with indigenous yeast for 45 days siphoned off in stainless steel tank. Bottled unfiltered & unfined; without addition of sulfites.
Aging: Best consumed now, it is at it`s peak.
Production: 1300 bottles.
