Natural Sparkling Wine from the indigenous red varietal Fokiano (100%).

Crimson red, thick and creamy with long-lasting legs and upward string of sparkles (cordon) that lasts up to 90 min.

Intense red and black fruits of the forest. Floral elements with violet being the headstart. Tight and juicy at the same time, it needs
time to unravel it`s intense temperament.

Complex and mouthful, creamy and vibrant with a long-lasting finish. The full longlasting tanins of the variety are integrated and compose definitive structure in the total balance which combines great with its bubbles and crispyness.

Food Pairing: Perfectly paired with red raw meats, boeuf tartar and ceviche.

Best served at 9c°.

Wine: Natural sparkling red

Variety composition: Fokiano 100%

Protected Geographical Indication (IGP): Ikaria

Vineyards: Ikaria, Profitis Ilias (600m. alt.) certified biological cultivation, and biodynamic cultiavtion, on adult plants from 15-60 years old.

Winemaking: Monovarietal natural sparkling dry red wine from Pithari collection, produced from the local Fokiano P.G.I Ikaria grape variety. Secondary fermentation in bottle in the cellar for 9 months. Limited production; wild indigenous yeast fermentation; undisgorged, no added sulphites, unfiltered & unfined.

Aging: Susceptible to long aging, up to 30 years.
