Varietal composition<\/strong>: Fokiano 100%.<\/p>\n

Protected Geographical Indication (P.G.I.)<\/strong>: Ikaria.<\/p>\n

Vineyard<\/strong>: Ikaria , Raches , Profitis Ilias 1,5ha, age of grapevines 50 and 10 years old, yield 25 hl\/ha, organic cultivation, altitude 600 m. Sandy clay soil from decomposed granite rock with low pH and high concentration in minerals and micronutrients.<\/p>\n

Vinification<\/strong>: Traditional local method, with grapes manually destemmed and squeezed in a winepress made of 5 large granite stones, macerated for 3-5 days and then fermented with their own indigenous yeast in clay jars buried in the earth in a special hold outside the winery. During this process there is no mechanical intervention or filtering, except some minimum sulfating (19mg\/l) before bottling.<\/p>\n

Aging<\/strong>: It is susceptible to long aging.<\/p>\n

Production<\/strong>: 1000 bottles<\/p>\n

Natural dry red wine from Fokiano varietal (100%) with I.G.P. IKARIA, the continuation of the legendary Homeric Pramnian wine follows the tradition up to this day.<\/p>\n

Opaque, bohemian garnet color with orange highlights, and long-lasting legs.<\/p>\n

Ripe forest fruits such as cherry, lychee, and blackberry in spoon sweet.<\/p>\n

Flavors of wild herbs and wild cherry dominate; intense minerality, with a wet granite finish that lasts up to several minutes.<\/p>\n

Food Pairing:\u00a0<\/strong>Sweet & sour dishes, big fresh fishes with herbs, meats with wild greens, rabbit stew and traditional merditeranean dishes such as Giouvetsi (baked meat with pasta), Gemista (stuffed peppers & tomatoes) Dolma, Soufiko, and Magirio.<\/p>\n

Best served fresh at 16-18c\u00b0<\/p>\n
