Region\/Vine domain:<\/strong> Ikaria\/Rahes<\/p>\n

Vinification:<\/strong> Destemming without pressing. The grape juice remains with the pomace for 3 hours. After that, it is pressed and cold soaked and then it is fermented in a controlled environment inside a closed stainless steel tank at a temperature lower than 12\u00b0C. After the end of the fermentation and the primary removal of sediment, the wine is stirred with its noble lees every 10 days for 3 months until it is finally bottled.<\/p>\n

Aging:<\/strong> Icarus ros\u00e9 is susceptible to aging of at least 2 years. Orange-red highlights increase while its nose becomes less vibrant. While aging its flavor characteristics improve, concluding to blackberry marmalade. Opaque, natural red-brown color with orange highlights, and long-lasting legs.<\/p>\n

Fruity and complex \u201cnose\u201d of forest fruits and herbs; dominant aromas of watermelon, milk caramel, rose, and herbs.<\/p>\n

Unexpected and surprising taste of white pepper, dried fruits, and Ikarian brushwood. Its full body balances
\nperfectly with its cooling acidity and its high minerality.<\/p>\n

Food Pairing: <\/strong>Light dishes, as well as seafood cooked in red sauces. Traditional Greek and Asian cuisine with sweet and sour tastes.
