Varietal composition:<\/strong>\u00a0Fokiano 100%.<\/p>\n

Protected Geographical Indication (PGI):<\/strong>\u00a0Ikaria<\/p>\n

Region\/Vine domain:<\/strong>\u00a0Ikaria\/Rahes<\/p>\n

Vinification:<\/strong>\u00a0Destemming without pressing. The grape juice remains with the pomace for 3 hours. After that, it is pressed and cold soaked and then it is fermented in a controlled environment inside a closed stainless steel tank at a temperature lower than 12\u00b0C. After the end of the fermentation and the primary removal of sediment, the wine is stirred with its noble lees every 10 days for 3 months until it is finally bottled.<\/p>\n

Aging:<\/strong> Icarus ros\u00e9 is susceptible to aging of at least 10 years. While aging its flavor characteristics improve, concluding to blackberry marmalade. Most of its crisp remains as well as its vivid aftertaste.<\/p>\n

Production:<\/strong> 1300 bottles (15 remain)<\/p>\n

Dark ruby color tile with brown reflections, long lasting legs.<\/p>\n

Strong animal nose, wild strawberry and black fruits of the forest.<\/p>\n

Tannic in the mouth, warm and crisp, spicy almond, Strawberry and plum jam. Deep and long after taste.<\/p>\n

Food Pairing: <\/strong>\u00a0Ceviche of seabass (Dicentrarchus labrax), rabbit stew or roasted cock with red sauces, grilled vegetables, or liguini with\u00a0 pink dressing.<\/p>\n
