Varietal composition<\/strong>: Fokiano variety 100%.<\/p>\n

Protected Geographical Indication (PGI)<\/strong>: Ikaria<\/p>\n

Region\/Vine domain<\/strong>: Ikaria | Profitis Ilias (600 m. alt.) and Litani (400 m. alt.) from organic cultivation vines.<\/p>\n

Vinification: <\/strong>Dehydration on plants and frames; \u201cCold soaking\u201d pre-fermentation before sediment is removed. Wild indigenous yeast fermentation in stainless steel tanks (lower than 10\u00b0 C\/80 days). Wine stored in oak barrels for 2 years, where aeration, stirring, & decanting is repeated 4 times, before it is siphoned off in stainless steel tanks for another 2 years. Bottled unfiltered & unfined; only a minimal addition of sulfites upon bottling.<\/p>\n

Aging:\u00a0<\/strong>Susceptible to very long aging.<\/p>\n

Natural sweet wine from Fokiano variety (100%) from hand picked noble rot grapes with P.G.I. IKARIA<\/p>\n

Amber color with orange highlights and full bodied with long lasting legs.<\/p>\n

Intense and rich \u201cnose\u201d with predominant aromas of honey, mushrooms and dried fruits.<\/p>\n

Rich and warm, its high acidity balancing its high alcohol content. Long-lasting aftertaste with hints of dried herbs and truffle mushrooms.<\/p>\n

Food Pairing:<\/strong> Served as an aperitif or as dessert wine. Paired with caramelized fruits, fruits with honey, Foie gras, fruit salads, chocolate, dried nuts, and high-fat cheeses with honey.<\/p>\n
