Protected Geographical Indication (PGI)<\/strong>: Ikaria<\/p>\n

Region\/Vine domain<\/strong>: Ikaria | Profitis Ilias<\/a> (600 m. alt.) and Litani (400 m. alt.) from organic cultivation vines.<\/p>\n

Vinification:<\/strong> The Natural sweet wine begins his trip from the dehydration on plants and frames; \u201cCold soaking\u201d pre-fermentation before sediment is removed. Wild indigenous yeast fermentation in stainless steel tanks (lower than 10\u00b0 C\/80 days). Wine stored in oak barrels for 2 years, where aeration, stirring, & decanting is repeated 4 times, before it is siphoned off in stainless steel tanks for another 2 years. Bottled unfiltered & unfined; only a minimal addition of sulfites upon bottling.<\/p>\n

Aging:\u00a0<\/strong>Susceptible to very long aging.<\/p>\n

Noble rot and natural concentration<\/h3>\n

The production begins with overripe grapes, when noble rot helps create greater concentration and aromatic depth. Through a special technique, part of the grapes dehydrate gently on the plants, while the rest dehydrate on frames in an outdoor shaded space. This process gives the wine natural density, sweetness and a complex aromatic profile.<\/p>\n

Slow fermentation and long ageing<\/h3>\n

After pressing, the must goes through cold soaking, sediment removal and fermentation in a closed stainless-steel tank below 10\u00b0C. Fermentation lasts 80 days, helping the wine develop depth and balance. Then, the wine stays for two years in old oak barrels and another two years in stainless steel before bottling.<\/p>\n
