Varietal composition<\/strong>: Fokiano 80%, Kountoura 20%.<\/p>\n

Vineyard<\/strong>: Ikaria , Raches , Profitis Ilias 1,5ha, age of grapevines 50 and 10 years old, yield 25 hl\/ha, organic cultivation, altitude 600 m. Sandy clay soil from decomposed granite rock with low pH and high concentration in minerals and micronutrients.<\/p>\n

Vinification<\/strong>: Pressed traditionaly in the stone press, maceration throughout all the fermentation\u00a0for 45 days. Wild indigenous yeast fermentation; no mechanical intervention and filtering; bottled unfiltered & unfined; zero addition of sulfites.<\/p>\n

Aging<\/strong>: Best consumed now.<\/p>\n

Natural dry red wine with the traditional Ikarian proccess from Fokiano 80% and Kountoura 20%.<\/p>\n

Ceramic color with brown highlights, and tartric acid crystals.<\/p>\n

Nose of animal, red and black fruits of the forest, mud and cherry liqueur.<\/p>\n

Mouthful of red ripe fruits and a hint of leather. Black fruit jam and bloody sensation with long aftertaste.<\/p>\n

Food Pairing:\u00a0<\/strong>Perfectly paired with rare or medium rare red meats, Giouvetsi with goat meat, stewed rooster with pasta, stewed rabbit and pork Gyulbasi. Can also be combined with matured cold cuts and spicy cheese platter. Needs ventilation for an hour.
